Live and Learn...

Today I made this delightful salad for dinner:

Ramen Noodle Salad

2 chicken breasts, cooked and cubed
2 tablespoons sesame seeds
1/2 cup slivered almonds
1/2 head cabbage or 1 bag coleslaw mix
4 chopped green onions (I used red onion today)
1 package chicken ramen noodles - broken into small pieces
Dressing:
2 tablespoons sugar
2 tablespoons white vinegar
1/2 cup vegetable oil
1 teaspoon salt
1/2 teaspoon black pepper
Flavor package from Ramen Noodles

Mix together almonds and sesame seeds in pan. Brown in oven at 350 degrees for a few minutes until lightly toasted. Remove from oven and set aside.

Combine cabbage, onion, chicken and ramen noodles in a bowl. Cover and refrigerate for at least one hour. Meanwhile, make dressing by combining all ingredients and mixing well. One hour before serving, add almonds, sesame seeds and dressing to cabbage mixture. Mix well. Cover and refrigerate until ready to serve.

At about 5:15 pm I took Grace to swim lessons with the plan that Grace and I would eat when we got home and the boys would eat while we were gone and then they would go to scouts with their father. I thought it was a great plan and dreamed about eating that salad the entire time I was gone. When I got home, there was only a very, very small bowl of salad left - not even enough for a meal. I was not a happy mommy!!

Note to self: Next time double the recipe! Or eat before the boys!

I love this salad! I can taste it by just reading through the ingredients. I think I just might have to make some and bring it over (this could be two years in the making).
